In order to pull off a win at this prestigious BBQ showdown, the pit-master competitors must work for months perfecting their recipes and preparing their team for battle. During the 2011 Texas Monthly BBQ Festival, one pit-master from Country Tavern BBQ in Kilgore, TX, traveled more than four hours, hauling more than 1,000 pounds of meat to the Long Center in the state's capitol. That's the equivalent of a whole cow. These BBQ festival competitors take this event as serious as if they were competing in the Olympics. And because the attention to detail is so great, festival attendees benefit greatly.
About the Food
As the Texas Monthly BBQ Festival gets underway in the chill of a November morning, the Heavenly smells of slow-smoked meats and sauced and slathered ribs permeate the surrounding area, seducing the senses of local Austin BBQ-lovers. But residents of the capitol city aren't the only ones who come down in droves to taste the best BBQ in Texas.
